Croquette\" width=\"300\" height=\"247\" srcset=\"https:\/\/mdcthereporter.com\/staging\/8357\/wp-content\/uploads\/2017\/09\/croqueta-300x247.png 300w, https:\/\/mdcthereporter.com\/staging\/8357\/wp-content\/uploads\/2017\/09\/croqueta.png 444w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-12083\" class=\"wp-caption-text\">PHOTO COURTESY OF CARLOS FRIAS<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">Everything\u2019s bigger in Texas took on a whole new meaning when a Dallas-based duo won the People\u2019s Choice award at Croquetapalooza in late August.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The award-winning croqueta, created by Miami Dade College alumni Gregory Castillo and Chris Cuan, who now live in Dallas, is called the \u201cThe Beyonc\u00e9,\u201d a concoction filled with barbecued brisket, jalapeno cheddar sausage, cheddar bay biscuits and elote Mexican corn mixed with pimento cheese that they grind by hand.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201c<\/span><span style=\"font-weight: 400;\">I wanted it to hit every note that it can, sweet, savory, umami, spicy, some heat,\u201d Castillo said. \u201cIt\u2019s deep fried love.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The croqueta, named in honor of singer and Houston native Beyonc\u00e9, is also smothered in a Hatch chili salsa, made from imported New Mexico<\/span><span style=\"font-weight: 400;\"> chilis, tomatillos and lime juice, perfect to contrast the meat\u2019s richness. \u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cIt really is a bite of Texas,\u201d said Cuan, who earned a bachelor&#8217;s degree in supervision and management from MDC in 2014 and previously worked at the College\u2019s <a href=\"https:\/\/theideacenter.co\/\"><strong><span style=\"color: #0000ff;\">Idea Center<\/span><\/strong><\/a>. \u201cIt\u2019s a fat boy\u2019s dream come true.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Croquetapalooza <\/span><span style=\"font-weight: 400;\">is run by food blogger Sef Gonzalez\u2014also known as the Burger Beast. Almost 1,000 people attended the event this year. Croquette won the 4th annual People\u2019s Choice category competing against 15 other restaurants. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cWe\u2019ve been eating croquetas since we were kids,\u201d Castillo said. \u201cSo when we won, it was a \u00a0homage to not only our Cuban culture, but our home and their support for what we do.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The pair grew up in the 305 smelling the aroma of their parents and grandparents cooking emit from their kitchen. Castillo even attended culinary school for a bit. The experience took him into the kitchens of some of the best restaurants in South Florida, including Michy\u2019s Relaxed Dining, Michael\u2019s Genuine Food and Drink and Miami Beach\u2019s Yardbird Southern Table &amp; Bar. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">When Castillo, a former photo editor and part of the inaugural staff at <\/span><i><span style=\"font-weight: 400;\">The<\/span><\/i> <i><span style=\"font-weight: 400;\">Reporter <\/span><\/i><span style=\"font-weight: 400;\">in 2010<\/span><i><span style=\"font-weight: 400;\">, <\/span><\/i><a href=\"https:\/\/www.mdcthereporter.com\/reporter-alum-selected-for-summer-internship-at-the-dallas-morning-news\/\"><strong><span style=\"color: #0000ff;\">landed a breaking news internship at the <i>Dallas Morning News<\/i><\/span><\/strong><\/a><span style=\"font-weight: 400;\"> in 2014 he was influenced by Texas cooking. Soon, barbecue made its way into Castillo\u2019s Cuban cuisine.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A year later Castillo, 25, moved to Texas for good after landing a full-time gig as the <\/span><span style=\"font-weight: 400;\">multimedia producer at the Dallas Museum of Art<\/span><span style=\"font-weight: 400;\">. The following year, Cuan, 29, also moved to Dallas to work for the <\/span><span style=\"font-weight: 400;\">Network For Teaching Entrepreneurship.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This past March, Castillo and Cuan, who have been friends for 15 years, started talking about starting Croquette<\/span> <span style=\"font-weight: 400;\">as a stand at the Dallas Farmers Market. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Croquette sold their first croqueta in June of this year, and nearly 70 days later, Castillo and Cuan won the People\u2019s Choice Best Croqueta Award at Croquetapalooza. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The Beyonc\u00e9 is one of six croquetas in their rotation with new ones added whenever the duo want to experiment. Each croqueta goes for about $2.50.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cThey\u2019re all concoctions and we have fun experimenting with different flavors,\u201d Castillo said<\/span><\/p>\n<p><span style=\"font-weight: 400;\">So what\u2019s next for Croquette?<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201c[It\u2019s] up in the air,\u201d Castillo said. \u201c[We are] <\/span><span style=\"font-weight: 400;\">excited to be named among these restaurants and culinary institutions, [and to be] part of a culinary scene with the people we love.\u201d<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Everything\u2019s bigger in Texas took on a whole new meaning when a Dallas-based duo won the People\u2019s Choice award at Croquetapalooza in late August.
