Watch This MDC Alum\u2019s YouTube Cooking Show"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">Social distancing hasn\u2019t stopped Gregory Castillo from having fun.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The loquacious 28-year-old has spent the past three Saturday mornings chopping vegetables, sauteing rice and marinating pasta\u2014all while recording himself on an iPhone 11 Pro.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Castillo, a former Kendall Campus student, has been busy filming <span style=\"color: #0000ff;\"><strong><a style=\"color: #0000ff;\" href=\"https:\/\/www.youtube.com\/user\/gregorycastillo1\">Quarantine Kitchen<\/a>,<\/strong><\/span> his <\/span><span style=\"font-weight: 400;\">Youtube cooking show, from the comfort of his home in Dallas.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00a0<\/span><span style=\"font-weight: 400;\">\u201cThe whole purpose of this is for me to have a creative outlet, to have fun because it&#8217;s a really difficult world that we&#8217;re living in right now\u2014it&#8217;s really scary and confusing,\u201d Castillo said. \u201cFor me, personally, I don&#8217;t do well under pressure, but this show gives me the ability to distract myself with editing and really silly jokes.\u201d\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The series showcases Castillo crafting quarantine-inspired recipes. Snippets feature their two chocolate cocker spaniels, Bastion and Ella, as recurring guests.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">They pick dishes based on what\u2019s available in their kitchen, and decide what recipe to try the day before shooting an episode.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The show has faced some obstacles. Their first episode\u2014where Castillo made bunker black bean dip\u2014had some lighting and sound issues.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">To address them, they began using a lavalier microphone and used the natural light from a window in the kitchen.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cThis isn\u2019t a perfect cooking show,\u201d Castillo said in a recent video, while clearing out the kitchen counter top to serve the pasta carbonara. \u201cThe people don\u2019t want a perfect cooking show.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Shortly afterward, Castillo\u2019s face appears pixelated on the screen as he feasts on the pasta. Subtitles appear below the frame that read: \u201cimagine an anaconda eating a bowl of pool noodles.\u201d\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The weekly show wasn\u2019t Castillo\u2019s first idea for a Youtube series.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Two months ago, he came up with the concept to create a comedic food show entitled Bad Cookbooks, where he would prepare recipes from uncharacteristic cookbooks.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Some of the cookbooks he planned to review were: <\/span><i><span style=\"font-weight: 400;\">Cookin&#8217; with Coolio: 5 Star Meals at a 1 Star Price<\/span><\/i><span style=\"font-weight: 400;\"> from rapper Coolio and <\/span><i><span style=\"font-weight: 400;\">Alice&#8217;s Brady Bunch Cookbook<\/span><\/i><span style=\"font-weight: 400;\">, which includes recipes from cast members of <\/span><i><span style=\"font-weight: 400;\">The Brady Bunch<\/span><\/i><span style=\"font-weight: 400;\">.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Castillo planned to record the first episode with a friend on March 14, but was forced to cancel because of the quarantine measures put in place due to the coronavirus outbreak.<\/span><\/p>\n<p><a href=\"https:\/\/www.youtube.com\/watch?v=W-6Ry4IrUyY&#038;t=31s\">https:\/\/www.youtube.com\/watch?v=W-6Ry4IrUyY&amp;t=31s<\/a><\/p>\n<p><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Five days later, the Dallas Museum of Art\u2014where Castillo works as a multimedia producer and Thompson manages teen programs\u2014instructed their employees to work from home.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI was like, \u2018you know, let&#8217;s come up with something,\u2019\u201d Castillo said. \u201cI want to do something fun, I want to do something at home, something to get my mind off of it, you know, to kind of be silly.\u2019\u201d\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">That\u2019s when the idea to produce a series with a quarantine-twist came about. Castillo, who had stocked up on groceries to prepare for the pandemic in February, decided to shoot the show <\/span><span style=\"font-weight: 400;\">on his iPhone 11 Pro to make the process quicker, even though he had bought a Blackmagic Pocket Cinema Camera 4K to record Bad Cookbooks.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cQuarantine and self-isolation\u2014it&#8217;s just such a completely new experience that, as a society, at least in modern history, we haven&#8217;t really experienced before, so it&#8217;s something that we can share with people, and they enjoy it,\u201d Thompson said. \u201cWe get a couple of laughs and maybe they find a new way to use the ingredients that we&#8217;ve all hoarded in our pantries. That would be the ideal situation, that it entertains and helps people.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Castillo\u2019s fondest memories of cooking come from his grandmother\u2014Theodora\u2014who would often make dishes like bistec empanizado or arroz con pollo for him as a child. That, coupled with watching food shows like <\/span><i><span style=\"font-weight: 400;\">Iron Chef America<\/span><\/i><span style=\"font-weight: 400;\"> on the Food Network, helped develop his love for food.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cEver since I was a little kid, I had dreamed about being a chef,\u201d Castillo said. \u201c[My grandma] just cooked every meal for us, and she overfed us. I was always like a chubby kid, and then I was a fat adult, and then I lost weight. PHOTO COURTESY OF GREGORY CASTILLO.<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">The two distinct passions forced conflict when he had to choose a career path; he couldn\u2019t decide whether to become a chef, producer or journalist.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Castillo enrolled at Miami Dade College in 2010 to study mass communication, but transferred to Le Cordon Bleu College of Culinary Arts in Miami three years later.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">After three months, problems with paperwork led Castillo to drop out, and he returned to MDC.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">During his time at MDC, Castillo was an integral part of the staff that launched <\/span><i><span style=\"font-weight: 400;\">The Reporter <\/span><\/i><span style=\"font-weight: 400;\">in October of 2010, serving as photo editor, news writer and Kendall Campus bureau chief.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Castillo\u2019s work earned him eight first-place honors from the Florida College System Activities Association, including best News Story, Feature Story, News Photo and Sports Photo.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In 2013, Castillo was <\/span><span style=\"font-weight: 400;\">awarded first-place at the Associated Collegiate Press Photo Excellence Awards at the 92nd Annual Associated Collegiate Press\/College Media Association Convention in New Orleans.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">He left the College a year later to intern at <\/span><i><span style=\"font-weight: 400;\">The Dallas Morning News<\/span><\/i><span style=\"font-weight: 400;\">, where he covered breaking news and took photos.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Castillo has worked at the Dallas Museum of Art since 2015 as a multimedia producer. He covers events, creates exhibition trailers and produces video and social media content for the museum.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">But he has not lost his fervor for food.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Castillo briefly opened Croquette, a croqueta stand at the Dallas Farmers Market with long-time friend Chris Cuan, in 2017. Two months after opening, <a href=\"https:\/\/www.mdcthereporter.com\/dallas-duo-miami-dade-college-roots-win-big-croquetapalooza\/\"><span style=\"color: #0000ff;\">the duo won first place<\/span><\/a> in the People\u2019s Choice category at Croquetapalooza, a cooking competition in Miami.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">He plans to continue shooting Quarantine Kitchen until the quarantine is revoked, and then kickstart Bad Cookbooks.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cMy goal is to just make something for myself [with Quarantine Kitchen]. And if people watch it, come along with it,\u201d Castillo said. \u201cI&#8217;m not saying that I don&#8217;t want it, that&#8217;s a bonus.
