The combination compacts the water particles creating a smooth and rich texture.<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">When <\/span><i><span style=\"font-weight: 400;\">Miami New Times<\/span><\/i><span style=\"font-weight: 400;\"> readers voted Lulu\u2019s Ice Cream as the best in the city, the review described the Biscayne Boulevard shop as charming, with w<\/span><span style=\"font-weight: 400;\">ooden panels covering the walls and picturesque tables delicately accented with fresh flowers. Owner Luisa Santos, 26, describes the ice cream as made from scratch, using fresh, locally-sourced ingredients. The final product is chilled with a splash of liquid nitrogen, creating a cloud of mist floating from a row of metal bowls. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">In the <\/span><span style=\"font-weight: 400;\">two <\/span><span style=\"font-weight: 400;\">years that Santos has been in business in Miami, locals have feasted on her Nutella, coconut, cookies and cream, hint of mint, coffee and strawberry creamy sweets on handmade waffle cones. But her days are much more than balancing the books and doing payroll. <\/span><span style=\"font-weight: 400;\">The Miami Dade College alumna spends her time meeting with fellow entrepreneurs, asking farmers about milk and training new staff at one of her two rustic ice cream shops. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cEvery single detail is extremely thought out,\u201d Santos said during a lunch break at the Idea Center at Wolfson Campus, where she is currently enrolled in the <a href=\"https:\/\/www.goldmansachs.com\/citizenship\/10000-small-businesses\/US\/\"><span style=\"color: #0000ff;\">Goldman Sachs 10,000 Small Businesses<\/span><\/a> program, aimed at helping small business owners. <\/span><span style=\"font-weight: 400;\">\u201cFrom the cups we use, to how we label them, the spoons we use, the napkins we use, to whether we provide plastic cups or glass cups for people to drink water out of.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Lulu\u2019s joins a crowded field of nitrogen ice cream shops like Brain Freeze, ChillN and F27 across the county but what sets her apart is her philosophy of sustainability, freshness and supporting other local businesses. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The ingredients are also different. Instead of buying a premade base, Lulu\u2019s buys milk and cream. There\u2019s also a variety of vegan-friendly options using coconut milk as a substitute and <\/span><span style=\"font-weight: 400;\">sorbets with local fruit. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">A cup with one scoop costs $5. Two scoops cost $6. A pint is $11. Toppings and sauces are all $0.75 extra.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Lulu was Santos\u2019 childhood nickname, but now it has a new face. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Lulu the cow lives at Dakin Dairy Farms in <\/span><span style=\"font-weight: 400;\">Myakka City, Florida <\/span><span style=\"font-weight: 400;\">and is just one of many cows that provide the milk and cream for the ice cream at her shops. The cows, a major part of the company\u2019s story and branding, are described as the \u201chappiest grass fed cows in Florida\u201d on the company&#8217;s website. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Santos\u2019 business success allowed her to expand to a second location in Miami Beach during the summer of 2016. Santos has also sold some wholesale to Scandinavian Airlines. \u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The young entrepreneur thinks of her business as a journey and is excited to continue evolving. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cWe don\u2019t have recipes today that we\u2019ll have in a year,\u201d Santos said. \u201cI realized there\u2019s a lot of awesome innovation starting in Miami. There\u2019s a lot of awesome people with awesome ideas working hard to make this city into what we&#8217;re going to become known as. I want to be a part of that.\u201d <\/span><\/p>\n<p><b>Establishing A Foundation At MDC <\/b><\/p>\n<p><span style=\"font-weight: 400;\">Santos was born in Bogot<\/span><span style=\"font-weight: 400;\">\u00e1<\/span><span style=\"font-weight: 400;\">, Colombia but her family moved to Miami when she was 8-years-old. She graduated from Coral Reef Senior High School in<\/span> <span style=\"font-weight: 400;\">2010<\/span><b>.<\/b><span style=\"font-weight: 400;\"> While in high school, Santos took dual enrollment classes at MDC. After graduation, she became a fulltime student at the Kendall Campus Honors College. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">She graduated from MDC in 2012 with an associates degree in international relations and then transferred to Georgetown University, where she earned a bachelor\u2019s degree in political economics with a minor in education in 2014. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">For Santos, coming back to the institution that first inspired her to become a global leader is a \u00a0part of her development as an entrepreneur.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cTo this day, I can\u2019t really leave, I love this place too much,\u201d Santos said. \u201cI\u2019ve continued to find ways that Miami Dade College contributes to my growth.\u201d <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Santos was highly involved during her time at MDC. She attended both the Washington and Salzburg seminars, and was part of the Model United Nations delegation. She also served as student government president and interned in the office of College President Eduardo J. Padr<\/span><span style=\"font-weight: 400;\">\u00f3<\/span><span style=\"font-weight: 400;\">n the summer before transferring to Georgetown. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Santos credits her extracurricular involvement with a lifelong desire to create and leave a positive impact on the world. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI ran for student government because I wanted to be able to build initiatives, do things. And to create a positive impact,\u201d Santos said. \u201cl have always been driven by those two things and eventually I was able to channel that into starting a company, but that wasn\u2019t my plan.\u201d <\/span><\/p>\n<p><span style=\"font-weight: 400;\">With dreams to work for the United Nations, Santos never thought she\u2019d end up being an entrepreneur. Her former international relations professor and Model UN advisor, Michael Lenaghan, thought the same. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cSome of my students, I swear they think I make up people like her to give them encouragement,\u201d Lenaghan said. \u201cBut she\u2019s a great example of someone not being limited by their original plan but being inspired by their opportunities and then making it work for her. To me, that\u2019s a good definition of a well educated person.\u201d \u00a0<\/span><\/p>\n<p><b>Dorm Room Beginnings <\/b><\/p>\n<figure id=\"attachment_9291\" aria-describedby=\"caption-attachment-9291\" style=\"width: 461px\" class=\"wp-caption alignleft\"><img decoding=\"async\" loading=\"lazy\" class=\" wp-image-9291\" src=\"http:\/\/www.mdcthereporter.com\/wp-content\/uploads\/2016\/11\/Lulus-5b-1024x683.jpg\" alt=\"A cup of Nutella ice cream from Lulu's.\" width=\"461\" height=\"376\" \/><figcaption id=\"caption-attachment-9291\" class=\"wp-caption-text\">JAYNELL PERERA \\ THE REPORTER<br \/>Nutella Madness: Nutella is one of the most popular flavors on the menu at Lulu&#8217;s.<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">The idea for Lulu\u2019s Ice Cream came about within the confines of a college dorm room in Georgetown. After hearing about the uses of liquid nitrogen for ice cream from her sister, Santos convinced a local nitrogen distributor to deliver a tank to her dorm room. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">From there, Santos claims things grew organically. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI started selling [ice cream] at the farmers market on campus, then I started doing catering and then finally I started doing off site farmers markets,\u201d Santos said. \u201cThis was all very fun, but I was still sending in applications for full time positions after graduation.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It wasn\u2019t until Santos was almost graduating that she decided to pursue Lulu\u2019s as a full time job. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI remember sitting in the library in Georgetown at 2 a.m. and being like, \u2018Why am I writing another resum<\/span><span style=\"font-weight: 400;\">\u00e9<\/span><span style=\"font-weight: 400;\"> and cover letter?\u2019\u201d Santos said. \u201cI have this thing that I really enjoy doing and I should just give it a shot and run full force with it, and see how big I can grow this.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Once Santos made up her mind about Lulu\u2019s, she entered in various business pitching competitions and sought out to assemble a team of solid investors. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Santos met Barbara Crocker, of the Washington, D.C.-based Barbara Crocker Design, through her involvement in the Georgetown Scholarship Program. Crocker eventually became one of Santos\u2019 lifelong mentors and helped Santos launch the company\u2019s first location in downtown Miami. \u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cLuisa has a great sense of how to make things happen,\u201d Crocker said. \u201cShe\u2019s a phenomena.\u201d <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Santos admits she encountered challenges along the way. Funding and licensing while opening her first brick and mortar were among her main issues. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cTo survive as an entrepreneur you can\u2019t let challenges become your concern, you can only let solutions become your concern,\u201d Santos said. \u201cThat is where I spend my entire day, finding solutions.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Without a formal business background, Santos gained her knowledge from books, workshops and other fellow entrepreneurs.<\/span><span style=\"font-weight: 400;\"> Now, she teaches every Lulu\u2019s employee personal finance and social entrepreneurship.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cIt\u2019s just about how many doors are you willing to knock on and how much are you willing to learn in a short period of time,\u201d Santos said. <\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>When Miami New Times readers voted Lulu\u2019s Ice Cream as the best in the city, the review described the Biscayne Boulevard shop as charming, with wooden panels covering the walls and picturesque tables delicately accented with fresh flowers.
